Ingredients (serves 4)
- 12 oz (340 g) linguine or spaghetti pasta
- 1 lb (450 g) shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, undrained
- 4 cups fresh spinach, roughly chopped
- ½ teaspoon red pepper flakes (optional)
- Salt and black pepper, to taste
- ½ cup grated Parmesan cheese
- Fresh basil leaves, for garnish (optional)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside, reserving about ½ cup of pasta water.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1 minute.
- Add the shrimp to the skillet, season with salt and pepper, and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp and set aside.
- In the same skillet, add diced tomatoes with their juices and red pepper flakes. Simmer for 5 minutes to let the sauce thicken slightly.
- Stir in fresh spinach and cook until wilted, about 2 minutes.
- Return the shrimp to the skillet and mix everything together. Add cooked pasta and toss to combine. If the sauce seems too thick, add reserved pasta water a little at a time to loosen.
- Sprinkle with Parmesan cheese and garnish with fresh basil if desired. Serve immediately.
