Ingredients
(Serves 2–3)
For the Salmon:
- 2 salmon fillets (6 oz each)
- Salt and black pepper, to taste
- 1 tablespoon olive oil
For the Crispy Potatoes:
- 1 lb baby potatoes, halved
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika
- Salt and black pepper, to taste
For the Broccoli:
- 2 cups broccoli florets
- Salt, to taste
- 1 teaspoon olive oil (optional)
For the Lemon Butter Sauce:
- 4 tablespoons unsalted butter
- 2 cloves garlic, minced
- Juice and zest of 1 lemon
- 1 tablespoon fresh parsley, chopped
- Salt and pepper, to taste
Instructions
1. Prepare and Roast the Potatoes:
Preheat oven to 425°F (220°C). Toss halved baby potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper. Spread on a baking sheet in a single layer. Roast for 25–30 minutes, flipping halfway, until golden and crispy.
2. Cook the Salmon:
Season salmon fillets with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Place salmon skin-side down (if skin on) and cook for 4–5 minutes. Flip and cook for another 3–4 minutes until salmon is cooked through and flakes easily. Remove from heat and set aside.
3. Steam the Broccoli:
While the potatoes roast and salmon cooks, steam broccoli until bright green and tender-crisp, about 4–5 minutes. Season with a pinch of salt and a drizzle of olive oil if desired.
4. Make the Lemon Butter Sauce:
In the same skillet used for salmon, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Stir in lemon juice, lemon zest, and parsley. Season with salt and pepper.
5. Assemble and Serve:
Plate the salmon alongside the crispy potatoes and broccoli. Drizzle the lemon butter sauce generously over the salmon and vegetables. Garnish with extra parsley if desired and serve immediately.

Tips & Tricks
- Crispier potatoes: Soak potatoes in cold water for 30 minutes before roasting to remove excess starch.
- Salmon doneness: Use a fork to check flakiness; it should easily flake but still be moist inside.
- Variations: Swap broccoli for asparagus or green beans based on your preference.
- Meal prep: Roast potatoes and steam broccoli ahead, then reheat and cook salmon fresh for best texture.
- Lemon zest: Don’t skip the zest — it adds vibrant citrus aroma and flavor.
